Instructions
Heat a skillet over medium heat, adding butter and olive oil until shimmering.
Drain the tuna and add it to the skillet, breaking it into smaller pieces until it turns golden.
Season the tuna with pepper and stir for about a minute.
While the tuna cooks, boil salted water in a pot and add your choice of short pasta, cooking until al dente.
Drain the pasta, reserving about two ladles of starchy pasta water.
Add the cooked pasta to the skillet with tuna, gradually mixing in the reserved pasta water until creamy.
Remove from heat and top with chili oil or Parmigiano cheese before serving.
