  • 1 cup bulgur wheat Select fine or medium bulgur for best results.
  • 1 unit onion, chopped
  • 2 units carrots, diced Cut vegetables evenly for uniform cooking.
  • 1 unit zucchini, diced
  • 2 units tomatoes, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste salt Adjust seasoning according to preference.
  • to taste pepper Adjust seasoning according to preference.
  • as needed fresh parsley for garnish Add for a pop of color and freshness.

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and sauté until translucent, about 5 minutes.
  • Add diced carrots and zucchini. Cook for an additional 5 minutes.
  • Stir in chopped tomatoes, bulgur wheat, paprika, and cumin. Cook for 2-3 minutes.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat to low and let the soup simmer for 15-20 minutes, stirring occasionally.
  • Season with salt and pepper according to taste.
  • Ladle soup into bowls and garnish with fresh parsley before serving.

Notes

For an extra flavor boost, consider adding a squeeze of fresh lemon juice just before serving. If you want a creamy texture, stir in yogurt or coconut milk just before serving.
