  • 1 medium spaghetti squash
  • 1 pound boneless, skinless chicken, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 shallot shallot, minced
  • 2 tablespoons sun-dried tomatoes packed in oil, drained and julienned
  • 1 cup heavy cream
  • cup grated Parmesan cheese
  • 3 ounces baby spinach
  • Fresh parsley, for garnish (optional)

Instructions
 

Preparation

  • Pierce the spaghetti squash with a knife and microwave it for 8-12 minutes until tender, or roast it in the oven until soft. Let it cool.
  • Season the chicken pieces with salt, pepper, and Italian seasoning in a mixing bowl, ensuring even coating.

Cooking Chicken

  • Heat 1 tablespoon of butter in a skillet over medium-high heat and add the seasoned chicken. Cook for 5-7 minutes until golden brown and no longer pink. Set aside.

Cream Sauce

  • In the same skillet, add the remaining tablespoon of butter. Sauté minced garlic and shallot for 2-3 minutes until soft and fragrant.
  • Add sun-dried tomatoes and cook for another minute to release their flavor.
  • Pour in the heavy cream, allow it to simmer and thicken slightly.
  • Stir in grated Parmesan cheese until it melts smoothly. Add the baby spinach and stir until it wilts.
  • Return the cooked chicken to the skillet and mix everything well to coat in the creamy sauce.

Mixing and Serving

  • Cut the spaghetti squash in half and scoop out the seeds. Use a fork to shred the flesh into spaghetti-like strands.
  • Add the spaghetti strands into the skillet with the chicken and creamy mixture, tossing until well combined.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For a spicy kick, consider adding crushed red pepper flakes. Adjust the seasoning as needed for taste. The flavors improve when allowed to rest after cooking.
