  • 4 cups chicken broth Use low-sodium for a healthier option.
  • 4 medium potatoes, diced Can substitute with sweet potatoes for a different flavor.
  • 1 cup kale, chopped Can be replaced with spinach or Swiss chard.
  • 1 cup heavy cream For a lighter soup, consider half-and-half or a dairy-free option.
  • to taste Salt Season according to preference.
  • to taste Pepper Freshly ground is recommended for best flavor.

Preparation

  • Heat a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Remove the sausage and set it aside, leaving the fat in the pot.
  • In the same pot, add the chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.
  • Add the diced potatoes and chicken broth, stirring to combine. Bring to a boil.
  • Once boiling, reduce heat and simmer for 10-15 minutes until the potatoes are tender.
  • Add the chopped kale and the cooked sausage back into the pot. Simmer for an additional 5 minutes.
  • Stir in the heavy cream, season with salt and pepper, and heat for another minute.

Serving

  • Ladle the soup into bowls and garnish with fresh herbs or grated cheese if desired.
