Main Ingredients

  • 1 lb Italian sausage (spicy or mild) Choose according to your heat preference.
  • 4 medium potatoes (diced) Yukon Gold potatoes are recommended for creaminess.
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth For a vegetarian option, use vegetable broth.
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1 bunch kale (chopped)
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • ¼ teaspoon crushed red pepper flakes Optional for added heat.
  • 1 tablespoon olive oil

Preparation

  • Gather all your ingredients and tools including a large pot or Dutch oven.

Cooking

  • Heat 1 tablespoon of olive oil in your pot over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion is translucent.
  • Add the Italian sausage to the pot, breaking it into smaller pieces as it cooks. Brown for around 5-7 minutes.
  • Stir in the diced potatoes, salt, black pepper, and optional crushed red pepper flakes.
  • Pour in 6 cups of chicken broth and bring to a boil.
  • Once boiling, reduce heat and let the soup simmer for about 15-20 minutes until the potatoes are tender.
  • Add chopped kale and stir in 1 cup of heavy cream. Cook for another 5 minutes.
  • Taste and adjust seasoning if necessary before serving hot.

Notes
