  • 1 cup ube puree Use smooth and creamy ube puree.
  • 1/2 cup unsalted butter, softened Make sure butter is softened but not melted.
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour for gluten-free cookies.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Optional toppings

  • as needed powdered sugar for dusting Use for an elegant presentation.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (3-5 minutes).
  • Add the egg and vanilla extract to the mixture and mix until well combined.
  • Gently fold in the ube puree until evenly incorporated.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not over mix.
  • Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them a few inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  • If desired, dust the cooled cookies with powdered sugar.

Notes

Chill cookie dough for at least 30 minutes for thicker cookies. Store cookies in an airtight container at room temperature. For longer storage, freeze cookies.
