Ingredients
  

For the Steak and Potatoes

  • 2 lbs sirloin steak, cut into 1½-inch cubes Best to use sirloin for balanced flavor and tenderness.
  • 1 tsp salt Adjust based on preference.
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp olive oil For searing the steak.
  • 1 large onion, diced Adds sweetness and flavor.
  • 3 cloves garlic, minced Enhances aroma.
  • 1 cup beef broth Use a quality broth for best flavor.
  • 1 tbsp Worcestershire sauce For a depth of flavor.
  • 1 tsp dried thyme
  • lbs baby potatoes, halved Can substitute with sweet potatoes for variation.
  • Fresh parsley for garnish (optional) Adds freshness when serving.

Instructions
 

Preparation

  • Season the cubed sirloin steak with salt, black pepper, garlic powder, and onion powder. Let it sit for about five minutes.
  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat.

Searing the Steak

  • Once the oil is hot, sear the steak cubes for about 2-3 minutes on each side until golden brown.
  • Transfer the seared steak into your crockpot.

Building Flavor Base

  • In the same skillet, add the diced onion and sauté for roughly 3-4 minutes until translucent.
  • Add the minced garlic and cook for an additional 30 seconds.

Combining Ingredients

  • Pour in a cup of beef broth, scraping any browned bits off the bottom.
  • Stir in Worcestershire sauce and dried thyme.
  • Pour this mixture over the steak in the crockpot.
  • Add the halved baby potatoes and stir gently to cover them with the broth mixture.
  • Cover the crockpot and set to cook on low for 6-8 hours or high for 3-4 hours.

Serving

  • Taste and adjust seasonings before serving, adding extra salt or thyme if desired.
  • Garnish with fresh parsley when ready to serve.

Notes

For best results, sear the steak properly. Also, consider adding more vegetables or swapping potatoes for sweet potatoes for variations.
