  • 1 large head cauliflower, cut into florets
  • 1 tablespoon coconut oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 can crushed tomatoes (14 oz)
  • 1 can coconut milk (15 oz)
  • Salt to taste
  • Fresh cilantro, chopped for garnish
  • Cooked rice or naan for serving

Instructions
 

Preparation

  • Heat the coconut oil in a large pan over medium heat.
  • Add the diced onions and sauté until they become translucent, about 5 minutes.
  • Stir in the minced garlic and grated ginger, cooking for another 2 minutes.
  • Add the spices: garam masala, ground cumin, ground coriander, turmeric, and cayenne pepper.
  • Cook the spices for 1-2 minutes to release their flavors.
  • Introduce the cauliflower florets and toss to coat with the onion and spice mix.
  • Pour in the crushed tomatoes and coconut milk, mixing everything until well combined.
  • Bring to a gentle simmer, then reduce the heat to low and cover.
  • Cook for about 20 minutes, or until the cauliflower is tender and the sauce thickens.
  • Season with salt to taste and garnish with fresh cilantro if desired.

Notes

To enhance flavor, consider roasting the cauliflower before adding it to the sauce. Use fresh spices for better potency. For added creaminess, try almond butter or cashew cream.
