Preparation

  • In a large mixing bowl, cream together softened vegan butter with light brown and granulated sugars until the mixture is light and fluffy.
  • Mix in the nondairy milk, vanilla extract, cornstarch, baking soda, and salt until evenly combined.
  • Gradually incorporate all-purpose flour into the mixture until just combined. Avoid over-mixing to ensure tender cookies.
  • Gently fold in the chopped dark chocolate, ensuring even distribution.
  • Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Form dough balls about 2 inches apart on the baking sheet.
  • Bake for 10-12 minutes until edges are lightly golden and centers are slightly soft.
  • Let cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
