Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup orange juice (freshly squeezed)
  • 1 cup plant-based milk (such as almond or soy)
  • 1/2 cup vegetable oil
  • Zest from 2 oranges
  • 1 tbsp vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In another bowl, mix the orange juice, plant-based milk, vegetable oil, orange zest, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing to keep the cake light and fluffy.
  • Transfer the batter to the prepared cake pan and spread it evenly.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
