Ingredients
  

Main Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup coconut sugar or brown sugar
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1 cup oats (or gluten-free oats)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Optional Add-ins

  • chocolate chips or nuts For extra texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the peanut butter, coconut sugar, maple syrup, and vanilla extract. Stir until you achieve a creamy, even mixture.
  • In another bowl, mix together the oats, baking soda, and salt.
  • Gradually add the dry mixture to the wet mixture, stirring until you combine everything well. If you want to add chocolate chips or nuts, fold them in at this stage.

Baking

  • Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each mound slightly with the back of a fork.
  • Bake for 10-12 minutes or until the edges are lightly golden, making sure not to overbake.
  • Remove from the oven and let the cookies cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
