Ingredients
  

For the Cupcakes

  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cups unsalted butter, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 0.5 cups milk

For the Frosting

  • 0.5 cups unsalted butter, softened
  • 2 cups powdered sugar
  • 0.5 cups peppermint extract To taste
  • 1-2 tbsp milk As needed for consistency

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a cupcake tin with festive paper liners.
  • In a mixing bowl, whisk together the flour, baking powder, and salt until well combined.
  • In a separate bowl, beat the softened butter and sugar together until creamy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  • Gradually mix in the flour mixture, alternating with the milk.
  • Divide the batter into three parts; color one with red food coloring, another green, and leave the last white.
  • Spoon alternating layers of the colored batter into the cupcake liners.

Baking

  • Bake for 18-20 minutes until a toothpick inserted comes out clean.
  • Let the cupcakes cool before frosting.

Frosting

  • Beat the butter and powdered sugar until smooth.
  • Gradually add peppermint extract and milk to combine to desired consistency.
  • Frost the cooled cupcakes generously with the frosting.
