Main Ingredients

  • 4 large large onions, any variety Vidalia or sweet onions offer delightful sweetness.
  • 6 cups water
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon cayenne pepper Optional, for heat.
  • 2 tablespoons olive oil
  • to taste fresh herbs (such as parsley or cilantro) for garnish
  • as needed lemon wedges for serving

Instructions
 

Preparation

  • Fill a large pot with 6 cups of water. Add salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper if using. Bring this mixture to a boil over medium-high heat.
  • Peel and trim the tops and bottoms of the onions. If the onions are large, cut them into halves or quarters to speed up cooking.

Boiling and Sautéing

  • Once the water comes to a boil, gently add the prepared onions. Allow them to boil for about 20-30 minutes, or until they are tender and slightly translucent.
  • Use a slotted spoon to carefully remove the onions from the pot and let them drain on a paper towel or in a colander.
  • In a large skillet, heat the olive oil over medium heat. Once hot, add the drained onions and sauté for about 5 minutes, until they caramelize and turn golden.

Serving

  • Serve the onions warm, garnished with fresh herbs and a squeeze of lemon.
