Wet Ingredients

  • 1/2 cup unsweetened applesauce Helps keep cookies moist.
  • 1 teaspoon vanilla extract

Add-Ins

  • 1/3 cup sugar-free chocolate chips Can substitute with dark chocolate chips if desired.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly spray it with cooking spray.
  • In a large mixing bowl, combine the almond flour, cocoa powder, sweetener, baking soda, and salt. Mix until the dry ingredients are well blended.
  • Add the unsweetened applesauce and vanilla extract to the dry mixture. Stir until you form a dough.
  • Fold in the sugar-free chocolate chips, ensuring they are evenly distributed throughout the dough.

Baking

  • Scoop tablespoon-sized portions of the dough onto the prepared baking sheet. Shape them into rounds and slightly flatten each cookie.
  • Bake in the preheated oven for about 10-12 minutes, or until the cookies look set but are still soft.
  • Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
