Ingredients
  

Vegetables

  • 1 head cabbage, chopped
  • 1 large onion, chopped
  • 3 medium carrots, sliced
  • 3 stalks celery, chopped
  • 2 medium green peppers, chopped
  • 4 cloves garlic, minced

Liquids and Spices

  • 1 can (14.5 oz) diced tomatoes With juices
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon basil
  • to taste Salt
  • to taste Pepper

Instructions
 

Preparation

  • Set a large pot over medium heat.
  • Add the chopped onions, sliced carrots, and chopped celery into the pot. Sauté for about five minutes, allowing them to soften.
  • Stir in the minced garlic and continue cooking for an additional minute.

Cooking

  • Add the chopped cabbage and green peppers to the pot. Cook for another five minutes, allowing the cabbage to wilt.
  • Add the diced tomatoes along with their juices, then pour in the vegetable broth. Stir in thyme, basil, salt, and pepper.
  • Bring the mixture to a rolling boil, then reduce the heat and cover the pot.
  • Let it simmer for 30 to 40 minutes, stirring occasionally.

Serving

  • Serve the soup hot and consider garnishing with fresh herbs or a dollop of Greek yogurt.

Notes
