  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin Adjust according to taste.
  • 1 teaspoon chili powder Adjust according to taste.
  • to taste Salt and pepper
  • 1 cup heavy cream or half-and-half For a lighter option, consider reduced-fat cream or coconut milk.
  • for garnish Chopped cilantro Adds freshness.

Preparation

  • Ensure your crockpot is clean and ready.
  • Combine shredded chicken, white beans, drained corn, and diced green chilies in the crockpot.
  • Pour in the chicken broth, ensuring ingredients are submerged, then add chopped onion and minced garlic.
  • Sprinkle in cumin and chili powder, season with salt and pepper to taste.
  • Mix everything together well, then cover the crockpot.

Cooking

  • Set crockpot to low for 6-8 hours, or high for about 4 hours.
  • About 30 minutes before serving, stir in heavy cream or half-and-half.
  • Ladle the warm soup into bowls and garnish with cilantro before serving.
