  • 2 pieces chicken breasts, thawed and trimmed of fat Use high-quality chicken for best results.
  • 1 ounce taco seasoning (1 packet or 2-3 tablespoons) Adds signature flavor to the chili.
  • 1 ounce ranch seasoning mix (1 packet) Enhances the flavor profile.
  • 15 ounces canned black beans, undrained Provides heartiness and texture.
  • 15 ounces canned corn, undrained Adds sweetness and crunch.
  • 10 ounces canned Rotel tomatoes with green chiles, undrained Gives a mild kick to the chili.
  • 8 ounces cream cheese Creates a creamy texture.

Instructions
 

Preparation

  • Begin by placing the thawed and trimmed chicken breasts at the bottom of your crockpot.
  • Sprinkle the taco seasoning and ranch seasoning mix generously over the chicken.
  • Pour the canned black beans, corn, and Rotel tomatoes directly into the crockpot without draining them.
  • Place the cream cheese on top of the other ingredients.

Cooking

  • Cover the crockpot and cook on LOW for 6-8 hours or set it to HIGH and cook for 3-4 hours.
  • Once cooking time is complete, remove the chicken breasts and shred them using two forks.
  • Return the shredded chicken to the pot and stir well until everything is combined.
  • Serve hot, garnished with slices of avocado, fresh lime, and chopped cilantro.

Notes
