White Lasagna Soup

Ingredients
  

For the Soup

  • 1 lb ground meat (beef or Italian sausage)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese divided
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Crusty bread for serving

Cooking

  • Heat a large pot over medium heat and add the ground meat. Cook, stirring, until browned, about 5 to 7 minutes.
  • Add the diced onion and sauté for about 5 minutes until softened. Add the minced garlic during the last minute of cooking.
  • Pour in the chicken or vegetable broth and bring to a gentle simmer.
  • Add the broken lasagna noodles and cook according to package instructions, about 8 to 10 minutes, until al dente.
  • Stir in the ricotta cheese, half of the shredded mozzarella, and grated Parmesan cheese until melted and well incorporated.
  • Gently fold in the baby spinach and Italian seasoning, cooking for an additional 2 to 3 minutes until the spinach wilts.
  • Season with salt and pepper to taste. Serve with the remaining mozzarella cheese sprinkled on top.

Notes

For a creamier soup, consider adding a splash of heavy cream or half-and-half before serving.
