  • 1 cup shredded mozzarella cheese For topping and flavor.
  • 1/2 cup grated Parmesan cheese For savory depth.
  • Salt and pepper to taste Adjust according to preference.
  • Italian seasoning to taste Enhances flavor.

Cooking

  • Heat a large pot over medium heat. Add the Italian sausage, breaking it up as it browns for about 5 to 7 minutes until no longer pink.
  • Stir in the chopped onion and minced garlic. Cook for an additional 3 to 5 minutes until the onion is soft and translucent.
  • Pour in the chicken broth and bring to a boil.
  • Add the broken lasagna noodles and cook until they’re al dente, about 8 to 10 minutes, stirring occasionally.
  • Reduce the heat to a simmer. Slowly stir in the heavy cream, spinach, ricotta cheese, shredded mozzarella, and grated Parmesan cheese.
  • Season with salt, pepper, and Italian seasoning to taste. Simmer for another 5 to 7 minutes until heated through.
