Witch's Cauldron Halloween Brownie Bites
Delightful brownie bites shaped like cauldrons, filled with frosting and decorated for Halloween fun!
Ingredients
- 12 Tbsp unsalted butter
- 1/2 cup semisweet chocolate chips
- 1/2 cup natural cocoa powder
- 1/2 tsp instant coffee grounds (optional)
- 1 cup light or dark brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 cup + 2 Tbsp all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup salted butter (for frosting)
- 8 oz cream cheese
- 1 tsp vanilla extract (for frosting)
- 4 cups powdered sugar
- as needed food coloring (your choice)
- as needed colored sprinkles
- as needed candy eyeballs
Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with baking spray.
- Melt the butter and chocolate chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
- Stir in cocoa powder and optional coffee grounds until well combined.
- Add both sugars and mix until smooth, then incorporate the eggs and egg yolk, mixing well.
- Stir in vanilla extract, then combine flour, baking powder, and salt in a separate bowl before folding into the wet mixture.
- Fill each compartment of the muffin tin with 1 1/2 tablespoons of batter and bake for about 18 minutes.
- After baking, create a small well in the center of each brownie bite using a rounded teaspoon.
- Allow to cool completely before transferring to a wire rack.
- Prepare the frosting by beating together butter and cream cheese until smooth, then add vanilla and powdered sugar.
- Color the frosting as desired and pipe it into the wells of the brownie bites, decorating with sprinkles and candy eyeballs.
