Instructions
Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with baking spray.
Melt the butter and chocolate chips in a microwave-safe bowl, heating in 30-second intervals until smooth.
Stir in cocoa powder and optional coffee grounds until well combined.
Add both sugars and mix until smooth, then incorporate the eggs and egg yolk, mixing well.
Stir in vanilla extract, then combine flour, baking powder, and salt in a separate bowl before folding into the wet mixture.
Fill each compartment of the muffin tin with 1 1/2 tablespoons of batter and bake for about 18 minutes.
After baking, create a small well in the center of each brownie bite using a rounded teaspoon.
Allow to cool completely before transferring to a wire rack.
Prepare the frosting by beating together butter and cream cheese until smooth, then add vanilla and powdered sugar.
Color the frosting as desired and pipe it into the wells of the brownie bites, decorating with sprinkles and candy eyeballs.
