Zucchini Pizza Casserole

A healthy and delicious twist on traditional pizza, this zucchini pizza casserole combines layers of zucchini, savory sauce, and melted cheese for a satisfying family meal.

Ingredients
  

Vegetables

  • 4 medium medium zucchinis, sliced thin Choose firm, medium-sized zucchinis without blemishes.
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 cup sliced mushrooms

Sauce and Seasoning

  • 1 can (15 ounces) pizza sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Cheese

  • 2 cups shredded mozzarella cheese Can substitute with other cheese varieties.

Garnish

  • to taste fresh basil leaves for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add olive oil. Once hot, sauté the diced onion until translucent, about 3-4 minutes.
  • Add the minced garlic and cook for about 1 minute until fragrant.
  • Stir in the diced bell pepper and sliced mushrooms, cooking until tender, about 5 more minutes.
  • Add the pizza sauce, dried oregano, dried basil, salt, black pepper, and red pepper flakes to the skillet. Mix well and let it simmer for 5 minutes.

Assembly and Baking

  • In a greased 9x13-inch baking dish, layer half of the sliced zucchini evenly on the bottom.
  • Spread half of the sauce mixture over the zucchini layer.
  • Sprinkle one cup of shredded mozzarella cheese on top of the sauce.
  • Repeat the layers with the remaining zucchini, sauce, and mozzarella cheese.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  • Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  • Allow the casserole to cool for a few minutes before serving. Garnish with fresh basil leaves if desired.

Notes

For best results, salt the zucchini slices and let them sit for 20-30 minutes to draw out moisture. Experiment with different vegetable and cheese combinations for added flavor.
